             Rasa means delight or essence, both of which promote healing.
             It is considered therapeutic for several reasons. A channel extends from the mouth to the head and brings the essence to the brain. This essence stimulates prana (vayu), which in turn stimulates the digestive fire. 
             If the taste of the food is not pleasing, the gastric fire may not digest the food and thus do not provide proper nutrition. That is why Ayurvedic cooking is a science itself, blending the right amount of herbs for the right taste. 
 
Types
There are six types of tastes given in Ayurveda:
  • Madhur (Sweet): Reduces vayu and pitta and increases kapha.
  • Amla (Sour): Reduces vayu and increases pitta and kapha.
  • Lavana (Salty): Reduces vayu and increases pitta and kapha.
  • Katu (Pungent): Reduces kapha and increase pitta.
  • Tikta (Bitter): Reduces pitta and kapha and increases vayu.
  • Kashaya (Astringent): Reduces pitta and kapha and increases vayu.
